This easy to make recipe gives you the benefits of having pickles without the hassle of having to preserve them over a hot stove. Grab some cucumbers from your garden or local market and try it out!

Wash your cukes, then thinly slice them. I like to use a crinkle cutter. 😀

Slice your onions…

Now, make them all cozy in a medium to large sized bowl. Like this:

Next, add your vinegar, water and seasonings, stir it up.

After it’s chilled in the fridge over night, scoop some into a bowl…

…and enjoy!!

I should let you know that I LOVE vinegar and to some folks this could be a bit strong, have no fear! There are tons of ways to tweak it to satisfy your palette: add sugar for a sweeter taste, add a little bit of water (but not too much), take out the onions if you don’t like those, etc. This is the basic recipe and I want you to take it, and make it your own! And if you do, I’d LOVE to hear about it! I am always looking for new and creative ways to EAT FOOD.

And now for the written recipe…

*Ingredients:

3-4 washed, sliced cucumbers

1/2 of an onion, sliced

2 cups apple cider vinegar

1 cup water

1/4 teaspoon mustard seeds

2-3 fresh garlic cloves, peeled or 1/2 teaspoon ground

2-4 black pepper corns, whole or 1/8-1/4 teaspoon ground

1/4 teaspoon salt

1 teaspoon sugar

1 1/2 teaspoons dried dill or 2 sprigs of fresh

Combine all ingredients in a medium to large sized bowl (at least 2.5 quarts) and let it marinate in the refrigerator. After a few hours, stir the contents to be sure all the cucumbers are getting soaked. Put it back in the fridge overnight. If you want them the same day, let it marinate for at least 4-6 hours. This is a great recipe to make at night before bed.
