Here’s another great recipe to use up those yummy, summer cucumbers. I like to make this at the same time as the Refrigerator Pickles since a lot of the ingredients are the same. If you’re a sucker for sour cream like I am, you’ll love this cool and creamy side salad!

Wash your cukes and thinly slice them. Put them in a bowl, like this:

This one has onions too, so slice those up and add them in so the cukes don’t get lonely.

Now for a splash of color! One of my absolute favorites~grape tomatoes!

Go ahead and slice those and toss them on top. Well, the ones you haven’t popped into your mouth! (I saw that!) 😉

After you make the dressing, pour it on top and coat all that yummy-ness well.

Let it chill in the fridge for a few hours. Have it with lunch or dinner, bring it to a potluck or enjoy as a just-for-yourself snack!

Okay, here are a few ways to alter this to please your palette: use Roma or cherry tomatoes, add more pepper, or a pinch or two of cayenne pepper, to make it spicy, add more sugar to make it sweet, add more vinegar to make it tangy (oh yeah!) or add chopped green onions & chives instead of the large onion slices. This is the basic recipe and I want you to take it, and make it your own! And if you do, I’d LOVE to hear about it! I am always looking for new and creative ways to eat FOOD.

And now for the written recipe…


3-4 washed, sliced cucumbers

1/2 of a sliced diced onion

a good handful (or 2) of grape tomatoes, halved

Put these into a medium to large-sized bowl (about 2.5 quarts or larger).


1 cup sour cream

1/2 cup white vinegar

1/2 cup milk

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground garlic

1 1/2 teaspoons dried dill weed

Combine ingredients in a separate bowl. Pour the dressing onto the cucumbers and onions, stir to coat. Let it marinate in the refrigerator for a minimum of 4-6 hours, longer is better. Serve chilled as a side or snack.
